Preparation
Mix the miso with the mirin, sake and sugar into a paste.
Spread this on the salmon fillet and cover with film. Marinate in the refrigerator for at least 1 day.
Set the oven to hot air (250 degrees) and grill (as high as possible).
Wipe the excess marinade from the salmon and place the salmon on a baking tray.
Bake the salmon in the oven for circa 8 minutes until cooked and golden brown.
Finely chop the spring onion and sprinkle it over the salmon.
Plate up the salmon and optionally serve with some vegetables.
