Preparation
Heat oil in a pan.
Peel and cut the onion into half rings.
Peel and crush the garlic.
Cut the chilli in half and then into half rings.
Fry the onion, garlic and chilli for circa 1 minute.
Add the curry sauce together with the coconut milk and two tablespoons of fish sauce.
Add the vegetables and shrimp and cook for circa 3 minutes.
Lastly, add the basil and save some for garnishing.
Serve with pandan rice.
