Ingredients

Preparation
  • Heat oil in a pan.
  • Peel and cut the onion into half rings.
  • Peel and crush the garlic.
  • Cut the chilli in half and then into half rings.
  • Fry the onion, garlic and chilli for circa 1 minute.
  • Add the curry sauce together with the coconut milk and two tablespoons of fish sauce.
  • Add the vegetables and shrimp and cook for circa 3 minutes.
  • Lastly, add the basil and save some for garnishing.
  • Serve with pandan rice.
