Ajinomoto Essentials

In 1908, the Japanese Dr Kikunae Ikeda made a remarkable discovery: umami, the fifth flavour, came from the essential amino acid glutamic acid. The following year, in 1909, the world's first pure umami flavour enhancer was introduced. This sodium salt of glutamic acid was named Aji-no-Moto, which translates freely to ‘lots of flavour'. 

In the West, we know the Japanese Aji-no-Moto as MSG: monosodium glutamate, the flavour enhancer that improves the savoury taste of food. It is a natural substance found in such foods as tomatoes, mushrooms and cheese. MSG is mostly extracted from plants such as corn and sugar cane and produced through fermentation. A highly versatile flavour enhancer.
