For more than half a century, Yama has been fascinated with Japanese food culture. As a producer and supplier, we believe in the ongoing search for balance and perfection. Quality and flavour always come before costs. Our ingredients and flavour solutions reflect the soul of Japanese cuisine. Perfection in everything you want your product to be.
Good-quality sauces elevate dishes to a higher level by enriching flavours and textures. Yama not only offers a wide range of tailor-made sauces, dressings and marinades; we also produce a range of standard seasonings for the food industry.
At Yama, we specialise in high-quality Japanese soy sauces. Every drop reveals a world of umami and aroma. Our naturally brewed Kikkoman soy sauces are world-renowned for their unequalled quality. For centuries, authentic soy sauces have been used to add a refined flavour to Asian - and particularly Japanese - dishes. With their unmistakable umami profile, both liquid and powdered Kikkoman soy sauces are essential seasonings for the food industry.
For over fifty years, the fifth flavour has been our number-one priority. Our passion, tradition and experience in this area make us the ultimate umami knowledge centre. We offer myriad solutions for the food industry. Think of e.g. achieving a fuller flavour and developing low-salt and clean-label recipes.
Since 1976, expertise, flexibility, speed and reliability have been the core tenets of Hügli and Yama's successful partnership. Our long-term partnership has resulted in the development of powerful broths and flavour components.
Lesafre's Biospringer is a natural product created by fermenting fresh yeast using a centuries-old process. Yeast extracts are used in myriad ways to develop products full of flavour.
In 1908, the Japanese Dr Kikunae Ikeda made a remarkable discovery: umami, the fifth flavour, came from the essential amino acid glutamic acid. The following year, in 1909, the world's first pure umami flavour enhancer was introduced. This sodium salt of glutamic acid was named Aji-no-Moto, which translates freely to ‘lots of flavour'.
In the West, we know the Japanese Aji-no-Moto as MSG: monosodium glutamate, the flavour enhancer that improves the savoury taste of food. It is a natural substance found in such foods as tomatoes, mushrooms and cheese. MSG is mostly extracted from plants such as corn and sugar cane and produced through fermentation. A highly versatile flavour enhancer.
