Momiki Gari x Gari Sauce

This vegetable sauce from Miyazaki, Japan, is made with local ingredients and contains tamari (gluten-free soy sauce), mirin and an umami-rich dashi of kombu and shiitake. The black garlic, homemade by the producer, gives the sauce a subtly sweet, candied flavour.
